Just in time for blueberry season! This Blueberry Poppy Seed salad is made with cashews, bacon, crunchy chow mein noodles and, you guessed it, blueberries. Drizzled with a refreshing poppyseed dressing, this salad is a summertime favorite.

Ingredients
- Blueberries – freshly picked are the best!
- Lettuce – romain is my favorite, but iceberg would work too.
- Cashews – unsalted and chopped into pieces.
- Bacon – store bought bacon bits or fresh bacon chopped into bits.
- Chow Mein noodles – found in the international foods aisle of most grocery stores and perfect for adding a little crunch to this salad.
- Poppy seed dressing – a homemade recipe that is equal parts easy and delicious.
Tools
- Cutting board
- Knife
- Collander
- Jar with a lid – or any small container with a lid
- Tongs
- Large serving bowl
Make the Blueberry Poppy Seed Salad
Making this Blueberry Poppy Seed Salad takes only a few minutes, making it the perfect weeknight or potluck side dish!
To start, chop your lettuce and rinse well in a colander. Allow the lettuce to dry slightly before placing it in the bowl, this will prevent the water from pooling in the bottom of the bowl.
While you wait for the lettuce to dry, chop up the bacon (unless using store bought bacon bits) and cashews. I find it easiest to simply use my hands to break the cashews into smaller pieces.
Next, place the lettuce in a serving bowl, followed by the cashews, bacon bits, blueberries and chow mein noodles.
Now for the dressing!
To the small jar or container, add olive oil, Greek yogurt, honey, lemon juice, apple cider vinegar and poppyseeds. Secure the lid and shake until thoroughly combined.
Drizzle the dressing over the salad and use the tongs to mix it all together.

- 2-3 heads of Romain lettuce
- 1/2 C cashews
- 1/4 C bacon bits

Dressing
- 1/2 C olive oil
- 4 tbsp Greek yogurt
- 1 tbsp lemon juice
- 4 tsp honey
- 4 tsp poppy seeds
- 1/4 tsp salt
- 1 tbsp apple cider vinegar
Instructions
- Chop the lettuce and rinse well. Allow tjhe lettuce to dry slightly before placing in the serving bowl.
- While waiting for the lettuce to dry, chop the bacon (unless using store-bought bacon bits) and cashews.
- Once the lettuce is dried, place it in the serving bowl followed by the cashews, bacon, blueberries and chow mein noodles.
- Next, place the olive oil, Greek yogurt, honey, lemon juice, apple cider vinegar, poppy seeds and salt to a small jar or container with a lid.
- Secure the lid and shake well until the ingredients are combined well.
- Drizzle the dressing over the salad and use tongs to mix well.
- Serve immediately.
Notes
This dressing doesn;t store well due to the chow mein noodles becoming soggy if left too long in the dressing. I recoomend serving the salad immediately after adding the dressing. Another option is the store the salad and dressing separately and add the dressing to your salad as needed.
Store any leftovers in the refridgertor 1-2 days, if desired.
