I don’t know about you, but I don’t feel like summer has officially arrived until I get to taste fresh strawberries; more specifically, strawberry pie. And I’m not talking the ones you can buy at the grocery store year-round. I’m talking fresh, juicy, just-picked, perfectly-sweet strawberries from a local farm.

I can vividly remember when my mom would make strawberry jam and pies each summer. My siblings and I loved helping and taste testing anytime we could. To this day, the smell of summertime strawberries brings me back to the days of picking strawberries and baking with my mom.
One of my favorite strawberry recipes that my mom would often make was (and still is!) strawberry pie. A shortbread crust filled with a chilled strawberry filling, and obviously topped with whipped cream. This pie is something I look forward to each year, so I am so excited to share the recipe for the best summer strawberry pie with you today!
What You Need
This strawberry pie recipe is fairly straight-forward and only requires a few simple ingredients – most of which you likely have on hand!
The ingredients you will need include:
- Strawberries – the fresher the better!!
- Flour – I use all purpose, but you could probably use a gluten free 1:1 baking flour too. You can find my favorite King Arthur flours here.
- Butter – don’t even try to “healthify” this recipe and omit the butter. This is such an important part of the crust, it is what binds it together and gives it the perfect shortbread texture.
- Sugar – because what kind of pie would this be without sugar.
- Water – nothing fancy here
- Cornstarch
- Strawberry Jell-O mix
Make your strawberry pie
Make the Pie Crust
This is by far my favorite pie crust ever!! The best part it that it’s super easy and requires minimal time (a big plus in my book!).
To start, you’ll want to make sure that the butter is softened to room temperature, this will make the process much easier.
Combine the flour, 2 teaspoons of sugar and a stick of butter in a small mixing bowl. I find that using a fork works best for this step and allows you to thoroughly combine the ingredients.
Once combined, the crust will be crumbly. Place it into a pie dish, gently pressing it into bottom of the pan until it is evenly spread out.
Next, you are going to bake the crust for 8-10 minutes, or until it begins turning golden brown along the edges.
Make the Pie Filling
While the crust cools, you are going to make the pie filling. To a saucepan, add add the water, 1 cup of sugar and cornstarch.
Stir this continually on medium – high heat until the mixture begins to thicken. This will happen quickly and can burn easily, so continue stirring.
Once the mixture thickens, remove it from the heat and add the Jell-O mix. Follow that by adding the sliced strawberries and stirring to combine.
Now, pour the strawberry mixture onto the cooled pie crust, spreading it evenly across.
Refrigerate the pie for at least 2 hours before serving to allow the Jell-O to set and the pie to cool (do not cover the pie upon initial refrigeration – it will cool faster if left uncovered).

All this is left is to enjoy your strawberry pie! I like to top mine with whipped cream, but it is great on its own too!

Strawberry Pie
Nothing says summertime like this strawberry pie. Fresh strawberries pair perfectly with a shortbread crust to make this delicious summertime dessert.
Ingredients
Crust
- 1 C flour
- 1 stick (1/2 C) butter
- 2 tbsp sugar
Filling
- 1 C sugar
- 1 C water
- 3 tbsp cornstarch
- 3 tbsp strawberry jell-o mix
- 4 C strawberries, sliced
Instructions
Make the crust
- Preheat oven to 375°F
- Use a fork to combine 1 cup flour, softened butter and 2 tsp sugar in a small mixing bowl.
- Transfer dough to pie pan, spread evenly in bottom of pan, gently pressing with hands to form crust.
- Bake crust for 8-10 minutes, or until the edges begin to brown slightly.
Make the Filling
- Add water, cornstarch and sugar to a small sauce pan. Stir continually on medium-high heat until the mixture thickens.
- Remove from heat, add strawberry jell-o mix, stir to combine.
- Allow the mixture to cool for about 1-2 minutes before adding to a large mixing bowl with strawberries.
- Transfer strawberry and jell-o mixture to the pie crust, spreading evenly over top.
- Refrigerate pie for 2 hours, or until jell-o sets.
- Slice and serve with whipped cream!
Notes
- store the strawberry pie in the fridge until ready to serve
- leftovers should be stored in fridge.
